My town has reached that part of the summer where all anyone remembers is HOT and we still have months more of HOT stretching out ahead. I need a break from the heat, so this week’s Pour Me One cocktail is the quintessential summer cool down drink. The combination of refreshing mint and citrus is hard to beat once the temperature climbs over 85…or 95…or 105. Fresh mint is easy to find during the summer and is a must have for this drink. Dried mint should not be substituted for the fresh under any circumstances unless you enjoy yucky little dried pieces of herbs floating in your cocktail.
Ingredients for one drink:
10 fresh mint leaves
1 1/2 ounces sweet lime juice
3 ounces light rum
Put the mint and lime juice in a tall glass. Gently crush the mint with the back of a spoon to release some of the minty oil. Add rum then fill glass with ice. Top off with lemon lime soda, stir well and enjoy.
We’re making a variation of this cocktail with blueberries for the upcoming engagement party. The blueberries add a very pretty color and make the cocktail taste more fruity. To try it, crush 3 or 4 blueberries in the lime juice at the same time as the mint.
