Maine was fantastic. Jet skis were ridden, camp fires were had, and lobster was eaten. However, the soaring Southern temperatures take some getting used to again after a week of highs in the mid 70’s. So, this weekend I whipped up a tall, cool, refreshing cocktail – a coconut lime daiquiri. The proportions below will make a blender full of daiquiris and fill 3 tall glasses or 4 short glasses. The coconut milk makes them very rich, so plan on having several friends around to help consume a batch or two.
8 ounces frozen limeade mix (about 1/2 a package)
7 ounces coconut milk (about 1/2 a 13.5 ounce can)
1/4 cup light rum
wedges of fresh lime
Combine limeade mix, coconut milk, and rum in a blender. Fill blender with ice. Blend until ice is crushed and drink is well combined. Garnish with a lime wedge and serve.
